Bulgur Wheat and Peach Salad with Butter Beans

Ingredients
  1. 2 C HOT water
  2. 1 C uncooked bulgur wheat
  3. 3 Tbsp fresh lemon juice
  4. 2 Tbsp olive oil
  5. 1 C sliced peaches
  6. 1/4 C butter beans, rinsed
  7. 1/4 mint, chopped
  8. Salt & pepper to taste
Instructions
  1. Pour hot water over bulgur wheat and allow to absorb for about 30 minutes. Fluff with fork. Combine lemon juice and olive oil and fold into bulgur. Add peaches, beans, and mint. Enjoy!
