English Tea Sandwiches (recipe)

English Tea Sandwich Duo (Prosciutto & Chive and Cucumber Dill with Tomato)

These two English Tea Sandwiches are great for entertaining large crowds. Presented together, these two variations offer flavors that are sure to please.

Ingredients
  1. 1 loaf Dark Rye Bread, crusts removed
  2. 1 loaf Buttermilk Bread, crusts removed
  3. 8 oz Cream Cheese, softened
  4. 1 bunch Dill
  5. 1 bunch Chives, cut to length of bread
  6. 1 Cucumber, thin-sliced, rind removed
  7. 2 Roma Tomatoes, thin-sliced, seeds removed
  8. 6 oz Prosiutto
  9. Toothpicks
For Prosciutto & Chive English Tea Sandwiches
  1. Using your crust-free Dark Rye bread, spread about 2 teaspoons of cream cheese on each piece (approximately 12 pieces).
  2. Place about 1/2 oz of prosciutto on each slice (about 1/2 of one very thin slice of pre-packaged prosciutto).
  3. Place 2-3 sprigs of chive on top of each slice of prosciutto.
  4. Sandwich together, two at a time, until you have about 6 sandwiches total.
  5. Slice each prepared sandwich into 3 equal pieces.
  6. Each piece will be small. This is desired.
  7. Place toothpick in each piece.
For Cucumber Dill with Tomato English Tea Sandwiches
  1. Using your crust-free Buttermilk bread, spread about 2 teaspoons of cream cheese on each piece (approximately 12 pieces).
  2. Place 1-2 very thin slices of cucumber on each slice.
  3. Place 2-3 sprigs of dill on top of each slice of cucumber.
  4. Place 2-3 thin slices of tomato on top of each dill-cucumber slice.
  5. Sandwich together, two at a time, until you have about 6 sandwiches total.
  6. Slice each prepared sandwich into 3 equal pieces.
  7. Each piece will be small. This is desired.
  8. Place toothpick in each piece.
