THIN MINT GIRL SCOUT COOKIE CAKE

INGREDIENTS - FOR THE CAKE
  1. ¾ C Butter, Softened
  2. 2 C Sugar
  3. 3 Eggs
  4. 1 tsp Vanilla Extract
  5. 1 tsp Mint Extract
  6. 2 C All Purpose Flour
  7. ¾ C Unsweetened Cocoa Powder
  8. 1 tsp Baking Soda
  9. ½ tsp Sea Salt, Coarsely Ground
  10. ¼ tsp Baking Powder
  11. 1 ½ C 2% Milk
  12. 12 Thin Mint Girl Scout Cookies, crumbled
INGREDIENTS - FOR THE CHOCOLATE MINT BUTTER CREAM FROSTING
  1. 1 ½ C (3 Sticks) Butter, Softened
  2. 1 C Unsweetened Cocoa
  3. 5 C Confectioners Sugar
  4. ½ C Whole Milk
  5. 2 tsp Mint Extract
  6. 18 Thin Mint Girl Scout Cookies, Whole
  7. 1 Bunch Fresh Mint leaves (for garnish)
DIRECTIONS - FOR THE CAKE
  1. Preheat oven to 350.
  2. Grease and flour three 9”. round baking pans. Set aside.
  3. In a large bowl, cream butter and sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. Beat in both extracts.
  4. In separate bowl, combine flour, cocoa, baking soda, salt and baking powder.
  5. Add to the creamed mixture alternately with milk, beating well after each addition.
  6. Stir in crumbled cookies.
  7. Transfer to prepared pans.
  8. Bake at 350° for 20-25 minutes or until a toothpick inserted near the center comes out clean. Cool for 10 minutes before removing from pans to wire racks to cool completely.
DIRECTIONS - FOR THE CHOCOLATE MINT BUTTER CREAM FROSTING
  1. Add cocoa to a large bowl or bowl of stand mixer. Whisk through to remove any lumps.
  2. Cream together butter and cocoa powder until well-combined.
  3. Add sugar and milk to cocoa mixture by adding 1 cup of sugar followed by about a tablespoon of milk. After each addition has been combined, turn mixer onto a high-speed for about a minute.
  4. Repeat until all sugar and milk have been added.
  5. Add mint extract and combine well.
  6. If frosting appears too dry, add more milk, a tablespoon at a time until it reaches the right consistency. If it appears to wet and does not hold its form, add more confectioner’s sugar, a tablespoon at a time until it reaches the right consistency.
  7. Frost sides and middle layers of cake until thoroughly covered.
  8. Place whole cookies around sides of cake, as well as on top, leaving room in middle for mint leaves.
  9. Place mint leaves in the middle of the top of the cake.

CARAMEL DELITE (SAMOA) GIRL SCOUT COOKIE DIP

INGREDIENTS
  1. 8 oz Cream Cheese, softened
  2. 8 oz Cool Whip
  3. ½ C Powdered Sugar
  4. ⅛ C Caramel Sauce
  5. ½ C Toasted Coconut
  6. Chocolate Sauce for drizzle
  7. Caramel Sauce for drizzle
DIRECTIONS
  1. In a large bowl, combine cream cheese, cool whip, powdered sugar and caramel sauce and beat until smooth.
  2. Pour into a serving bowl, making sure there is enough space between dip and rim of bowl to save room for toppings.
  3. Top with toasted coconut then drizzle with chocolate sauce and caramel sauce.
  4. Serve with shortbread cookies, graham crackers or vanilla wafers.
  5. ENJOY!

  1. 3 Caramel deLite (Samoa) Girl Scout Cookies, chopped
  2. 3 Peanut Butter Patty (Tagalong) Girl Scout Cookies, chopped
  3. 2 TBSP Chocolate Syrup
  4. 3 C Vanilla Ice Cream
  5. ¼ C 2% Milk
DIRECTIONS
  1. In a large bowl, combine cream cheese, cool whip, powdered sugar and caramel sauce and beat until smooth.
  2. Pour into a serving bowl, making sure there is enough space between dip and rim of bowl to save room for toppings.
  3. Top with toasted coconut then drizzle with chocolate sauce and caramel sauce.
