  1. 1/2 C carrots, julienned
  2. 1/2 C purple cabbage, julienned
  3. 1/4 C pea shoots
  4. 1/4 scallions, diced
  5. 2 Tbsp cilantro, chopped
  6. 2 Tbsp Thai basil, chopped
  7. 1 tsp lemongrass puree
  8. 1 Tbsp lemon juice
  9. 1 tsp rice vinegar
  10. 10-12 rice paper wrappers
  1. Cover rice wrappers with warm water and allow to soak for at least 5 minutes until pliable.
  2. Combine all ingredients except wrappers in medium bowl and toss. Allow to marinate for at least 15 minutes. Spoon 2 Tbsp of mix into rice wrapper, leaving 1" of space at bottom. Fold bottom and then sides in, and wrap tightly. Refrigerate for 10 minutes. Enjoy with your favorite dipping sauce.
