Ingredients
  1. 1 Double-crust Pie Crust (Top & Bottom)
  2. 4 Cups Red Huckleberries
  3. 1 Cup Sugar
  4. 5 TBSP Corn Starch
  5. 3 TBSP Butter, separated into 1 TBSP pats
Instructions
  1. Preheat oven to 450 degrees
  2. Prepare pie pan with bottom crust, leaving enough overhang to pinch together top crust at finish
  3. Mix Huckleberries, Sugar, and Corn Starch together until evenly mixed
  4. Pour Huckleberry mixture into prepared bottom crust, then cover with top crust
  5. Decorate, score, or crimp top crust as desired
  6. Bake over a cookie sheet (to prevent over-spill on oven) at 450 degrees for 10 minutes, then drop temperature to 350 degrees and continue cooking for 30-35 minutes.
