SPICY BACON BROWNIES WITH BACON WHIP (Variation of Mandarins)

SPICY BACON & MANDARIN BROWNIES WITH BACON WHIP

Ingredients
  1. FOR BROWNIES
  2. 3 Thick Slices Bacon, diced
  3. 2 Thick Slices Bacon, Cut into 12 1" Squares (keep separate)
  4. 1/4 C Melted Butter
  5. 1/4 C Rendered Bacon Fat
  6. 1 C Sugar
  7. 2 Eggs
  8. 1 tsp Vanilla Extract
  9. Juice of one Mandarin
  10. 1/3 C Unsweetened Cocoa Powde
  11. 1/2 C All-Purpose Flour
  12. 1/2 tsp Course Sea Salt
  13. 1/4 tsp Baking Powder
  14. 1/2 tsp Cayenne Pepper
  15. 1/2 tsp Cinnamon
  16. (approximately) 1 TBSP Brown Sugar.
  17. FOR WHIPPED CREAM
  18. 1 C Heavy Whipping Cream
  19. Peel of one Mandarin, finely diced
  20. 1 TBSP Sugar
  21. Dash of Cayenne
  22. Dash of Cinnamon
  23. A few pieces of left-over bacon pieces from brownie recipe
Instructions
  1. FOR BROWNIES
  2. Preheat oven to 350 degrees.
  3. Grease and flour 8" square pan.
  4. In sautee pan on medium heat, cook diced bacon (3 thick slices) until fat is rendered and bacon is thoroughly cooked, but not yet crispy.
  5. Remove cooked bacon bits from pan, but leave rendered fat in pan. Reduce heat to low.
  6. Add 1/4 C butter to pan and allow butter to melt into rendered bacon fat. Remove from heat.
  7. In mixing bowl, combine eggs and sugar until smooth. Add melted fat and butter mix, starting with a very small amount to start, and drizzling in slowly while mixing constantly.
  8. Add vanilla and continue to mix.
  9. Add cocoa powder, flour, salt, baking powder, cayenne, and cinnamon. Mix thoroughly.
  10. Fold in reserved cooked bacon pieces, but save a few pieces for whipped cream topping.
  11. Spread batter evenly into prepared pan.
  12. Bake 15 minutes, or until toothpick comes out almost clean, but not completely clean. (A few sticky crumbs should appear).
  13. Allow to cool in pan for 10-15 minutes, then cut into 12 equal brownies.
  14. Cook the remaining 12 1" squares of bacon on medium heat until almost crispy.
  15. Add a sprinkling of brown sugar to each piece during final 30-seconds of cooking, until sugar begins to bubble and caramelize.
  16. Remove from pan and add directly to brownies: one piece of bacon per brownie.
  17. FOR WHIPPED CREAM
  18. In VERY COLD electric mixer with VERY COLD whip attachment, whip heavy whipping cream and sugar until stiff peaks appear.
  19. Remove from mixer to serving bowl.
  20. Top with reserved bacon pieces brownie recipe, and sprinkle with a dash each of cayenne and cinnamon.
