Few things make my mouth water quite like a Strawberry. For me, it borders on an obsession. Even the color of a perfectly ripe, scarlet red strawberry can make my heart sing. It’s no mystery to me as to why they’ve become the subject of breathtaking photos, paintings, even fashion; they’re gorgeous! But they don’t just photograph well. Lucky for us, they’re delicious too!
I could go on and on about my favorite strawberry desserts: trifles, cupcakes, macaroons, tarts, custards, souffles, pies, and (of course), the infamous Strawberry Shortcake. I’m not sure I could ever tire of these decadent desserts, though every spring it seems I test that theory. Imagine my excitement when I discovered a strawberry dish so luscious, so delectable, so divine, so exquisite, so…healthy? Yes, please!!
I read an article about Strawberry Soup, and HAD TO HAVE IT! Five (yes, I said FIVE) ingredients, and five (you’re still reading this correctly) minutes later, I was devouring this exciting new dish. What can I say? I’m in love! If you’re as intrigued as I was, and have five minutes to spare, let me assure you: this is worth your time.
Chilled Strawberry Soup with Balsamic Reduction and Basil (Serves 2-4)
Here’s what you need:
8-10 medium-sized ripe Chilled Strawberries (Vitamin C will boost your immune system!)
2 Cups Very Cold Milk (I used non-fat, and didn’t miss a thing!)
2 TBSP Honey + enough to drizzle over finished soup (Local honey is best! Your allergies will thank you for it!)
2 Basil Leaves, Julienne sliced (Helps prevent infection, promotes heart health, and acts as an anti-inflammatory! )
3 TBSP Balsamic Vinegar (Antioxidants give your skin a healthy glow! Instrumental in weight-loss/management!)
Here’s what you do:
* Heat balsamic vinegar over medium heat until it begins to bubble. Turn heat to low. Simmer until reduced by half. Cool reduction in refrigerator if desired, or use warm. Your call.
* Place Strawberries, milk, and honey in blender and blend until smooth. Pour into serving bowls.
* Top soup with a drizzle of honey, a drizzle of balsamic reduction, and sliced basil.
* Enjoy obsessively.
