Summer Couscous Salad with Tomatoes and Mint

  1. 1 1/2 C Instant Couscous
  2. 2 C boiling water
  3. 2 large tomatoes, cut into quarters
  4. 1 cucumber, chopped
  5. 1/2 C torn mint leaves
  6. 1/2 C parsley, chopped
  7. 1/4 toasted almonds, sliced
  8. 2 Tbsp lemon juice
  9. 1 Tbsp olive oil
  10. 1 oz crumbled Feta
  11. salt & pepper to taste
  1. Cover couscous with water and allow to absorb. Fluff with fork after 5 minutes.
  2. Combine olive oil, lemon juice, salt, and pepper. Combine with couscous thoroughly. Add the other ingredients at the end. Top with Feta.
