Summer Couscous Salad with Tomatoes and Mint

Ingredients
- 1 1/2 C Instant Couscous
- 2 C boiling water
- 2 large tomatoes, cut into quarters
- 1 cucumber, chopped
- 1/2 C torn mint leaves
- 1/2 C parsley, chopped
- 1/4 toasted almonds, sliced
- 2 Tbsp lemon juice
- 1 Tbsp olive oil
- 1 oz crumbled Feta
- salt & pepper to taste
Instructions
- Cover couscous with water and allow to absorb. Fluff with fork after 5 minutes.
- Combine olive oil, lemon juice, salt, and pepper. Combine with couscous thoroughly. Add the other ingredients at the end. Top with Feta.
